Health -- this is something everyone seems concerned with this these days, and for good reason. With such a large percent of the population falling victim to diabetes, Alzheimer's,  cancer, and other diseases on a regular basis, many look to our American diet as being the cause. Is our diet to blame? By changing our diet, can we prevent such diseases from inflicting us? If so, what do we need to change? With so many fad diets and conflicting and antiquated notions of what is healthy, it is important to understand the science behind our food and how it affects our bodies.
